RELISH:
6 sm red radishes, small dice
1 stalk celery, small dice (optional)
1 shallot, minced
1 cubanelle pepper, minced (optional)
DRESSING:
3 tb apple cider vinegar
1 t mustard seed
1/8 t celery seed
1/8 t salt
1/8 t pepper
1/8 t sugar
Whisk together the dressing ingredients in a small bowl. Place the remaining ingredients in a medium bowl. Drizzle with dressing and toss to evenly distribute. Allow to sit 20 minutes before serving.

Give it a try with some cilantro and ginger for a more Indian flavor, or substitute green onions for shallots.
Try using dilly carrot brine instead of cider vinegar.
